Fermentation has been an integral part of the human diet for thousands of years, as it brings many benefits and creates new flavors.

Fermentation is not only an ancient preservation method, but a great addition to our diet that has a positive effect on our gut health and thus on our overall condition and skin appearance.

In this workshop, we will learn more about fermenting fruit and vegetables and put the knowledge we have gained into practice. With the help of lactic acid bacteria, we will prepare sour delicacies from fresh vegetables together.

After the workshop, you will take three homemade ferments home with you!

Theory part with a small tasting of fermented products

While we make a snack and enter the world of fermentation, I will tell you:

  • What actually is fermentation?
  • What fermented products are there?
  • How are our health and skin condition linked to our gut?
  • Science-based knowledge about the benefits of eating fermented foods
  • How does lactic acid fermentation of fruit and vegetables work?
  • How can you incorporate fermented products into your everyday life?

Practical part with 2 ferments and a bonus ferment

I have a large selection of spices for you and will prepare the vegetables for you. After the workshop, you will take at least two home-made ferments home with you:

  1. You'll make a whole 1L jar of sauerkraut or kimchi. You decide which ferment you want to make at the workshop when you register.
  2. Using a slightly different fermentation technique, we will also make a 0.5 L jar of fermented seasonal vegetables, seasoned to your taste.
  3. Not everything has to be salty in fermentation! How about a natural sparkling lemonade that's low in sugar? I bet you'll be celebrating this recipe come summer!

Bonus: Bring your own jar* - we usually chop a bit more veggies than necessary. It's handy if you can simply take any leftovers that didn't fit into the fermentation jar with you.

Debriefing

After the ferments have been prepared, we discuss them together:

  • When the ferments are ready
  • How to care for them
  • How you can process them further and incorporate them into your everyday life
