Sourdough - Microbes - Art - AI

This special workshop combines sourdough fermentation, tasting, microbial art and AI-generated creativity into a unique experience. Together we will dive into the invisible worlds of fermentation and combine craft, science and digital art.

Bread & Bot is an experimental format from the New Era Lab.

It is not a classic baking course. It is an experiment between bread, microbes, art and technology.

What you can expect

Experience sourdough fermentation

Together, we will prepare a sourdough bread dough that you can take home and bake fresh the next day.

You will learn what happens in the dough during fermentation and how microorganisms turn flour and water into a living food.

During the workshop, we will also taste other fermented specialties and experience how diverse pickles, bread drinks and the like can taste.

Your bread between craft and AI

The second part of the workshop opens up an experimental space between bread, art and artificial intelligence.

You will develop your own personal bread and experience how a digital work of art can be created from it at the same time.

All works will then become part of the Bread & Bot online gallery.

Fermentation as art

Another artistic take on fermentation comes from Marietta Hollensteiner, who works with microscope photography of microorganisms.

Her large-format art prints make the otherwise invisible actors of fermentation visible and accompany the workshop as a visual installation in the room.

Jessica Stüer

Nutritionist, co-author for sourdough in "Naturally Fermenting" by WECK and founder of the community Brotmutti. She will guide you through the fermentation workshop and explain the science behind sourdough.

Angela Ziegler

Creative strategist, systemic coach and AI artist and founder of the New Era Lab. She develops experimental formats at the interface of craft, technology and art and accompanies you in your creative work with AI intervention.

Special guest: Marietta Hollensteiner
