Spring is here and is finally bringing fresh ingredients back to the table! This course focuses on exactly that: crunchy vegetables, a variety of herbs and refreshing flavors and all without any substitute products (except tofu).
Together we will prepare a multi-course menu that combines lightness with depth. The focus is on seasonal ingredients, clear techniques and conscious seasoning. Instead of strict adherence to recipes, the focus is on understanding and harmoniously balancing flavors. The menu is suitable for everyday use, yet refined. It shows how versatile and elegant plant-based spring cuisine can be, namely fresh, unagitated and with plenty of room for your own variations. Ideal for anyone who already cooks vegan, wants to learn or simply wants to expand their repertoire with seasonal, spring dishes.
